Light, Healthy and Creamy Chicken Corn Chowder

Quick Chicken-Corn Chowder from Cooking Light

It’s freezing here this week in Alabama, so I thought let’s do a warm, comforting soup that is rich and so good, but guess what? It’s light, weighing in at under 300 calories per serving, with 19 grams of protein per serving and only 8 grams of fat. Fresh basil and jalapeno give it a boost of flavor, and I like to use rotisserie chicken purchased from the grocery store to make preparation time even faster. Stay warm and enjoy!


Creamy Chicken Corn Chowder

Prep: 10 minutes

Cook 8 minutes

Yield: 6 servings 

Ingredients

1  tablespoon  butter

1/4  cup  chopped onion

1/4  cup  chopped celery

1  jalapeño pepper, seeded and minced

2  tablespoons  all-purpose flour

3  cups 2% reduced-fat or skim milk

2  cups  chopped roasted chicken (I used rotisserie chicken)

1 1/2  cups  fresh or frozen corn kernels (about 3 ears)

1  teaspoon chopped fresh or 1/4 teaspoon dried basil

1/4  teaspoon  ground red pepper

1/8  teaspoon  salt

1  (14 3/4-ounce) can cream-style corn

Preparation

1. Melt the butter in a large Dutch oven over medium heat. Add onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently. Add flour; cook 1 minute, stirring constantly. Stir in milk and remaining ingredients. Bring to a boil; cook until thick (about 5 minutes).

    yum! this was perfect for this cold night! it was a hit in my house-everyone wanted more! it is very satisfying and amazing that it ‘light and healthy” but since i made it i know that it was light!
